actually, no, I’m going to add: if you pop amaranth, it’s done way faster than you think. I think most of the over-toasting is from leaving the amaranth in the pan where I was popping it ~20 seconds too long.
definitely! my only thought is that I suspect having a nice heavy cast iron skillet helped keep the toasting even.
last night I also made some amaranth porridge with honey, which I am currently cooking down in a little butter and oil. my conclusions about amaranth are that for my palate, it must be toasted.
It’s not bad! It’s a bit over toasted, and I think it would have benefitted from another spoon of honey (and maybe a shake of cardamom or nutmeg?) but it’s a perfectly agreeable yogurt topping.
okay I did ballast this granola with oats that I toasted in butter before adding the popped amaranth, slivered almonds, pecans, walnuts, and a couple tablespoons of honey to toast all together.
