I'm still adjusting to lox. The smoked salmon I ate growing up (Southcentral Alaska) was practically jerky.

Awesome article, as always, Talia! I know I’m supposed to eat more fish but i generally don’t enjoy it very much. But I do enjoy it when smoked, which you’ve just reminded me!
