My headcanon for the dark stripes that goliaths have is that every now and then, a goliath's skin hardens into a stone-like texture, which then cracks and then falls off to reveal new skin underneath. A series of dark stripes - molt marks! - are left behind, in the spots where the fissures formed!
My intention was the latter - a senior aasimar, as opposed to a middle aged aasimar or a young adult; but I love your interpretation too!
