There was a huge range in trilobite size and morphology from when they originated in the Cambrian through their extinction at the end of the Permian. Some were probably crunchy morsels and others would have made a delectable scampi, shelled and deveined.

I heard about some finches living on an isolated tropical archipelago that developed different beak sizes depending on their trilobite preference.
