WOW, impressive!! My neighbor makes a copycat apple crisp specifically for really huge ones, cooks the chunks down with lots of cinnamon and sugar in a pot then bakes it, I’m not a huge fan of vegetable desserts but it’s surprisingly great if you’d like the recipe
