I use the "boiled" fruitcake recipe from Leith's Baking Bible (you can tell from the stains on the pages...). Somehow putting all the dried fruit into a pan with a large chunk of butter makes it all a bit easier.

Old-fashioned Boiled Fruit Cake

"This cake is not, as the name suggests, boiled instead of baked. The fruit is boiled in water and orange juice and allowed to stand overnight before use, which gives it a wonderful plumpness. Instead of being decorated with marzipan and icing, the cake is finished with a glazed fruit and nut topping and tied with a ribbon. It can be used as a wedding cake (see the table on pages 390-91). Because this cake is packed with dried fruit it is easy to burn, so it is very Important to keep a close eye on it when it is cooking and, if in doubt, turn the overs down and cover the cake. However, it is definitely worth the effort."
