Gollum could see that Bilbo had his hand in his pocket, he was clutching the Ring in his fist at the time (IIRC). So "Your hand" would have correctly answered the riddle

But he couldn't, which is how Bilbo was able to initially get away with lying when Gollum said "handses!"
