It not only made meals fuss-free, it helped control portions, keeping their budget under control. With just two of us in the house, the mini-loaf is just as easy, but I've been considering the meatloaf balls.
This reminds me... A friend's family used to make meatloaf as large, muffin-sized meatballs and cook them in a muffin pan. Her mom would make a bunch and freeze them, then just pull out one per family member to cook.
I think we only have a half-pound of the clearance ground mix left. I hope I find another deal like that, because it's served us very well.
To the meal total was ~1.43 ~0.72/serving Very basic, but tasty meal. I'm actually pretty full, too.
We went simple with the sides... a can of corn (0.48) and a couple slices of buttered bread. (~0.12) it's been a busy week. Kid1 and I were not up to cooking.
The meat was from the clearanced haul at 1.67/lb (~0.84) Egg was free from a relative's hen I used the heel of a loaf of bread for the fill and some of my freezer mirepoix for the onion.
A week or two back, I used half a pound of ground beef/pork mix for a meal, and at that time, I used the other half pound to make a small meatloaf. It fit in a mini loaf pan and was just big enough for two people. Dug it out of the freezer today for an easy meal.
