Forests can reach a certain form of stability. However, succession is a thing. What we no longer have much of is old growth forests. Letting forests get old trees creates a particular kind of diversity now rare. Some things only exist in this habitat with large fallen trees.
Whatever you do leave standing or fallen dead trees in the forest. That is what makes the most significant structure. Trying to create past forest with mega fauna is likely a fools errand. What does help undergrowth is wolves as deer in our temperate forests browse way too much foliage otherwise
