This is a great idea! sounds like my never ending struggles of pipewire vs pulse on Arch.
Apple is quite bad because it has so much garbage running in the background. You can steady the latencies with Linux/Pipewire. I don't like to use Linux for Linux but for this task it would be just genuinely better performer. No random events, pop up, sounds, latency peaks.
