What's interesting to me is that "bitter" vegetables from different families have different qualities of bitterness. I love Brussels sprouts and kale and all the other crucifers, but the earthy bitterness of Swiss chard or winter spinach needs a LOT of lemon.

I was confused because I was like, "radishes aren't in the Brassica genus" so I had to google and, ah, yes, they're still in Brassicacaea, and still considered crucifers I mean, I know you know your shit, but sometimes I have to remind myself these are all mustards

Yeah, I’ve also had tacos with squash as the main filling, like there’s precedent for it in the flavor space of burrito-adjacent Mexican dishes. But idk why you gotta bring crucifers into the picture when you can make an excellent and nutritionally complete veg burrito without going there.
