Fresh epazote too. Dead easy to grow in the UK, dies off in winter but self seeds everywhere and comes up again in late spring.

There's a plant call Epazote, very common in Mexico. It gives all legumes (beans, garbanzos, lentils, etc) a delicious and fragrant touch if use when boiling them. It's great in quesadillas, too. It's also quite easy to grow from seed and nice to look at. That's my suggestion: Epazote.

Ran out of @smokedaddy.bsky.social’s dry rub, so doing a sorta-mole negro inspired rub for pork shoulder today - cocoa powder, oregano (out of epazote), black pepper, allspice, nutmeg, cinnamon, maple sugar, ancho chili, dried ghost pepper, cumin (will leave the cumin out next time I think)
