The main benefit of entry-level LSDJ is that it's free, you can download the ROM and use a game boy emulator. Compared to the cheapest way to use the M8 which is the Headless M8 which involves buying a Teensy 4.1 for $27 and that's it.
The LSDJ to M8 workflow is virtually 1:1, with the M8 you get the benefit of channel flexibility and more channels, with LSDJ you get the 'benefit' of forced limitation. It would *probably* be a little bit harder going from M8 to LSDJ, but not like, terribly so imo
