These were probably the ugliest examples, but these are absolutely delicious cookies: Italian ricotta cookies with pistachios, covered in ganache. Will make again. (Modified a standard cookie recipe by replacing vanilla with pistachio emulsion and adding chopped, toasted pistachios.)

I ate some with pistachios and frozen bananas. Then used some in something that also worked well. A lower fat version of a breakfast biscuit for biscuits and gravy. Taste and texture were nice. Didn't feel like a sacrifice at all. Froze 3 of the 4 I made. We'll see if they hold up at a later date.
