frying it off in a stainless steel meant i had usable fond from the chicken & veg so i deglazed with soy sauce, then added oyster sauce and shaoxing wine, a bunch of spices, MSG, sesame oil, reduced it and then threw in the noodles to coat. genuinely one of my favourite things ive ever made
