#breadsky Please help my injera be less sad. Anyone have a recipe they know works? All the ones I’ve tried always have mold before they naturally ferment, so I cheated with this attempt by using a tiny amount of sourdough started to kickstart the fermentation. Not sure why they are so rubbery.

2. Make dough - biga _^ - 145g AP flour - 65g WW flour - 35g Rye flour - 220g H20 - 25g Butter - 1 x egg yolk (~20g) - 25g milk powder - 10g salt - 150g sourdough starter (hungry & fridge cold, stiff ~80% hydration) Mix in stand mixer, moving from lv. 1->4 over 10-12 minutes #breadsky 🍞🍽️

My English muffin recipe is a llittle weird, but hot damn it works. 1. Make a Biga - 300g bread flour - 150g H2O - 0.375g AD yeast Proof the yeast (biga is too dry on its own), combine all; you will need to knead in the last of the flour. Ferment 12-14 hours. #breadsky 🍞🍽️

Whey fluffy sandwich bread! For this one, I replaced the usual eggs and water with whey (60% bp) and added some milk powder (2% bp) for extra strength just in case. Don’t get whey-belayed from whey play, making yoghurt and whey is super simple. #breadskywww.marthastewart.com/948811/homem...

They’re in Kursk almost certainly as a hedge against a Trump peace plan that would freeze conflict on current lines. The “useful splendor” of rolling a winter offensive into a summer offensive without break was great for Russia’s self image and propaganda, now they have to hold onto US election.
