It's to indicate to you that the wine hasn't "corked," where mold from the cork produces trichloroanisole that contaminates the wine and softens the cork. You're meant to bite the wine-end of the cork and, traditionally, say "Fancy meeting you here," misheard French for "Fin, c'est 'maintenu' y."
