This has been my go-to potato form recently. I parboil, smosh, then oven roast. So good, so easy. Although probably not as easy as one cookie sheet.

Both of those movies are delightful! Might need a rewatch of Romy and Michele since I've got a (not 10th) high school reunion coming up.
