I teach mainly grad stats/methods courses. Course projects involve proposing research question, analyzing data, & writing report. I provide feedback on assignments that focus on different parts of report, then full draft, then final paper. Happy to share assignments if relevant to your courses.
Even when student evaluations of teaching are available, I suggest folks think about other ways to evaluate & demonstrate teaching effectiveness. Depending on teaching context: peer observation/feedback, publishing with students, pass rate for credentialling exam, etc.
Or set up a google voice voice number. You can set hours when it rings on your cell phone vs goes directly to voicemail.
