Before the pandemic, I would prep cookie doughs of all kinds all fall, freezing them in anticipation of an end-of-term party. I’m still not up for quite that (for many reasons), but feel the urge to restock my freezer for my guests, grads, & home game. What is your favorite/best cookie recipe?
I'm limiting FODMAPs to treat IBS, so I had to find an alternative to my usual choc. chip. But these are TOO good; I eat them all at once: 1C peanut butter, 1C brown sugar, an egg, tsp vanilla, pinch salt. Make drop cookies, pressing down top with fork. Bake 10 minutes at 350. Eat them all -- OOPS!
Dorie Greenspan’s World Peace Cookies! There is disagreement in my family on how thick to cut them but everyone gobbles them up either way. They freeze very well.
