Longtime GURPS player and GM here. Make the character you want, not the one a class system requires! Point-buy attributes/advantages keeps play decently balanced, and GURPS has lots of modular rules you can take or leave(from 1-roll combat to "Italian and French fencing are mechanically different").

I'm about to invest in Pathfinder. I've been resisting it until now, but this is my final straw.
