So my best guess using my very ancient memory that the lemon juice and the fact that it's refrigerated and I'm guessing eaten pretty quickly makes the risk low.

The lemon juice definitely helps preserve it, but not all lemons have the same level of acidity. If you want to be super-safe, you can use bottled lemon juice, which is usually a consistent 5% acidity. The flavor may be different because of the bottled juice, possibly.
