The key to the bannetton is to use Rice Flour! It makes all the difference. #EDUbread #sourdoughbread All that I know started with Brian Lagerstrom video. He recommended the baking sequence and temps. Variations after that occured based upon iteration and research. https://youtu.be/VEtU4Co08yY

@jenroberts.bsky.social I have taken up #breadtherapy mostly of the #sourdoughbread variety #edusky What I have learned is that the more mistakes I make, the better the bread is in the end! Here is a finished product plus the next batch cold proofing in the refrigerator. What does this example mean?
