I feel like using PostGIS or other databases is very useful and powerful (not even necessarily writing queries, just like saving layers/styles somewhere other than the local filesystem) but the tools to get started interacting with them are really unintuitive.

I agree! SQL was pretty easy for me to get started learning, but setting up a database is a whole different deal.
