It’s years ago now, but “Thirtysomething” was excellent, cancelled after its 4th season. Still stings.

I don’t know if they were canceled or intentionally short runs, but two shows my kid watched that I ended up loving: Gravity Falls (2 seasons) and Owl House (2.5 seasons). Both ended flawlessly if you ask me, but I would have enjoyed more.

Firefly.

Carnivále and John From Cincinnati kind of absurd that either even got 1 season. and I'm not sure they would have been great long term but they each have such a strange specific vibe that no other show has really filled since - dust bowl carnival good v evil and a surfer who kinda floats
