Oh I have eaten it before. The fruit is common in China lol. It can grow completely floating or can grow with sand to root in like a water lily! I believe it's a very hardy plant. And there is a plant that looks quite similar to it, and it's a commercial cultivar: Mosaic Plant - Ludwigia Sediodes
That plant looks need an extremely big space to grow haha
Ohhh so I just did a bit more research and asked a friend. He told me it's because this is a Japanese cultivar, and it was introduced to China by the Taiwanese, who renamed it. The original Japanese name is MURASAKI SHIKIBU! If you search Nymphaea Murasaki Shikibu you will actually see it! Heck!
Look at this pic I saw online lmao. This is "Black Beauty" that is able to have flowers even grown in a fish bowl only 33 cm wide (13 in). Just astonishing! Personally, I like its flower color than Helvola but I don;t see any seller in the US, sadly
