And those are the ones I can say with confidence are their own thing There's others to and where do you even begin with them I love all of them obviously but I come from WoW where almost everything gets classified, and I am also a zoologist at heart

Honestly I would assume those are all vastaya of different kind, including the rats from Arcane's Zaun in the first post - maybe, like with Pokemon rules, Zaun's atmoshpere causes local vastaya to assume vermin form! That's my understanding of it, at least.
