Would Dodge for melee attacks skew the importance of Dodge compared to the other two? If I'm pumping Dodge, I can't really be touched.

It could I guess. Dodge to me to avoid melee just makes sense as a comparison to the real world since trying to dodge an attack requires speed. You could add fortitude as an option for damage reduction maybe, soaking up the damage better instead of avoiding?
