If you can, do it! As the page mentions, it’s super fatty and that renders, but we actually keep it in the fridge rather than pouring it off. It makes great cooking fat and really delicious fried potatoes!

Lamb breast recipes

One of the least expensive cuts of lamb, breast is full of flavour and needs to be cooked slowly. Although it's quite a fatty cut, during cooking the fat melts off and can be poured away.
