Trying another new dish today, Stuffed sweet potatoes. Following this recipe my mum saw on Lorraine. www.itv.com/lorraine/art... Think if we had it again we would swap walnuts for cashews but overall it was nice, turns out I like a baked sweet potato covered in mozzarella.
Yesterday, I had old bananas, but not enough for banana bread, so I used fresh apple sauce for the missing portion. It's not half bad.
